The Grit’s Tofu “Meatloaf”

It’s so weird that The Grit is no longer operating in Athens. But I’m thankful to have a food splattered cookbook with a lot of their staples. Here is their Tofu Meatloaf.

2 tablespoons olive oil
1 small yellow onion, finely minced
1 teaspoon minuced fresh garlic
1 small green bell pepper, finely minced
2 cups vegetarian “ground beef”
2 tablespoons vegan Worcestershire sauce
1 block firm tofu, crumbled
1 cup quick- cooking rolled oats
1 cup walnut pieces
4 tablespoons ketchup
1/2 cup nutritional yeast
1/2 cup soy sauce
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1-1/2 teaspoon fresh rosemary
1/2 teaspoon onion powder
1/2 teaspoon dry mustard
